After having a frustrating week dealing with car repairs, and receiving a letter with detailing how we are going to be financially screwed for the next year, it was topped when Sisko started having seizures yesterday.<br />
<br />
I spent a lovely afternoon with my bestie, having coffee, browsing the craft store, and selecting teas to try before my birthday. I was able to drop off my rental car and pick up my VW since there was apparently nothing wrong with it. That's a story in itself, but who cares. The car is fixed. <br />
<br />
When I arrived home, I let the dogs out of the bedroom, but Sisko did not greet me. I had to call his name before he came out of his bed. Not thinking anything of it, I sat on the couch and waited for hubby to get home. Sisko sat at my feet and just started up at me for a long time. I invited him up on the couch, but he wouldn't make the jump. I picked him up and cuddled him close. <br />
<br />
Within moments, I felt him shaking beside me. He was sitting, but his legs and back muscles were jerking in place. He had a dazed look and couldn't focus on me. On cue, hubby walked in the door. I called him over and he dropped his papers and with one look, deemed Sisko needed a vet. <br />
<br />
His shaking did subside within a minute, and since money is slim, we decided to wait to take him to our vet tomorrow instead of paying extra for an emergency vet. That plan was quickly thrown out when he had several more, smaller fits over the evening. As well, I had let the boys out for their bedtime pee, and Sisko decided to fixate on the chicken pen, so I bent down to put my hand on his chest to move him away, but the mere touch of my hand made him yelp. <br />
<br />
So, off the the emergency vet we go.<br />
<br />
The vet's opinion is its either epilepsy, poison, or a brain tumor. I approved blood work and took home a few days worth of medication for epilepsy. Once I get the blood work back, I will be continuing care at our regular vet.<br />
<br />
This morning, Sisko seems to be feeling better, just tired and mopey. No serious shaking, just a bit of head bobbing. The concerning thing at this moment is he has yelp twice when I touched him and he won't jump up or take his paws off the ground. Very odd behavior.<br />
<br />
So that's my story. I'm pretty tired and am eager for the call from the vet.<br />

As usual, stress has crept up on me again. A simple, benign day turned into a long sleepless night yesterday. My stress level is so high, I'm eating pizza pops for breakfast. Gross. <br />
<br />
So, to cope with my stress, I decided to go through my snow day photos from Sunday.<br />
<br />
Sunday we had an unexpected, and surprisingly heavy, snowfall. Freezing rain was expected later that day, so we took the dogs outside for an extended play session. While outside, hubby came and stood beside me. In between kicking the soccer ball for Jack, he says "Let's take pictures of Snow White."<br />
<br />
I was so stoked. I rounded up the dogs, grabbed my camera and a towel, and met Earl outside again as he gathered up Snow White from her hutch. We kept it short, but it was a lot of fun. She had such a great time hopping around the snow and nibbling the grass poking out from the crust of snow. Within minutes, we dried her off and put her back to bed and next thing I knew, Earl had Scuttlebutt (my black buck) and was looking for a place to put him down. I just laughed and snapped away with my camera.<br />
<br />
Not long after we put Scuttlebutt back, the freezing rain started. And so ends our winter.<br />

Happy New Year to all! And Merry (belated) Christmas while I'm at it! <br />

Hope everyone had a great holiday with friends and loved ones. I know I did. Well, as much as I could manage while being a Grinch. Holidays are just too much for me most times. Too stimulating with so much visiting, noise, and stress. I start off so positive, but as the stress and social engagements start to pile up, I get so overwhelmed I end up shutting down and becoming a hermit. Its my only defense. That being said, I do love seeing all my family and I love the spirit of Christmas.<br />
<br />
Sorry, bit of a tangent there. Back on point. Happy New Year!<br />
<br />
2014 was a tough one, one I would not like to repeat. 2015 is going to be my year. I'm going to really focus on my goals. I have so many.<br />
<br />
1) Clean up my eating habits.<br />
I am terrible for eating properly. I feel this is due in part by me feeling sick all the time. Who wants to make food when you feel like you've been hit by a truck or have a pounding headache for the third day in a row? Not me! Hence, I buy convenience foods, eat out, or just don't eat. None of this is healthy. This year, I'm going to focus more on prepping meals in advance and I feel that will help with a lot of my problems. If I already have a meal ready to cook, what's my excuse for eating out? <br />
<br />
2) Write more.<br />
I just love to write, but I never do it. That's going to change.<br />
<br />
3) Less TV, more books.<br />
Says it all really.<br />
<br />
I have several smaller goals that I will be working on as well, but these 3 are my main focus. If I can dedicate even a fraction of my day on any of them, I will be a better person for it.<br />
<br />

I've written out my list, and I'm ready to get crafty! <br />
<br />
Both sides of my family do a Secret Santa and the names have been drawn! I've spent a lot a time thinking of gift ideas for everyone and now that I know who I got for Secret Santa, I'm ready to get started. This is an ambitious year and I plan on making all my gifts. I hope I don't burn out by the middle of November and end up with a bunch of half finished projects. <br />
<br />
I'm not very good at picking out presents for people, especially under pressure, but I think I've got it this year. I think I actually thought of some good ideas! I will have to take some photos and put them up after the gifts are given. I'm going to get my supplies on Friday and get cracking. Very exciting. <br />
<br />
The only snag in my plan is Hubby's birthday in a few weeks. What on Earth can I make him before then. Goodness. Tough one there.<br />

Today marks the Canadian Thanksgiving. A day of turkey, pie, family, and more pie. It also marks the first day of our holiday season. Soon will be Halloween, our Remembrance Day to look back and give thanks to our veterans, Christmas, and New Years. As well, the majority of my family has their birthday in the winter months.<br />
<br />
Today, however, is a great reminder to look back on all we have and to be thankful.<br />
<br />
As winter draws closer, the days get shorter, and the weather turns bitter, its good to have a day like Thanksgiving. Traditionally a day to get together and share the year's harvest, its a day to be thankful for all that you have. Winding down the year with remembering all I have to be thankful for this year is a great reminder. <br />
<br />
Anyone who knows me or my family knows that we have had a very difficult year. It could even be considered the hardest 10 months we have ever experienced as a family. I won't go into details since it is long and I would feel very much like I was having a pity party, but trust my word. It has been because of these difficulties that I haven't upheld my personal goal to blog and write more, hence the absence here, but I plan on changing that.<br />
<br />
With the tradition of giving thanks, I want to count the blessings among the storm of ill luck and bad days we have had.<br />
<br />
I am deeply thankful for my husband. Because of him I have been able to take this year off work and it has been such a blessing. Not having to work meant I was able to spend more time with my family and with myself. Because of my husband's support, I was able to learn a new hobby and have fallen in love with blacksmithing. My husband is my greatest support, and my greatest love. I can't imagine a better life then the one I share with him.<br />
<br />
I am thankful to my dogs. They are great motivators to be better. It doesn't matter how I feel, they still need love and exercise and depend on me to give it to them. No slacking! However, Jack is a wonderful cuddle buddy when I am having a bad day and will sit quietly with me until Hubby comes home. So thankful to have him nearby.<br />
<br />
My family. Where would a person be without their family? This year has brought us closer for so many reasons, and I am so thankful for that. I love my family and couldn't ask for a better set of people to share my life with. I have watched my niece grow up and attend her first day of kindergarten and my nephew as he started walking in earnest, getting into all kinds of trouble! I have seen both my sister and sister-in-law become amazing mothers in the same weekend! Just before my birthday, both of these amazing women (and their husbands of course) welcomed their daughters into the world, and I couldn't ask for a better birthday gift then to be their Auntie. My brother proposed to his amazing girlfriend of 5 years, much to the delight of us all. We all knew they were meant for each other, so it was a delight when my brother made it official. She is such a wonderful woman, and I'm so excited for them both.<br />
<br />
And finally, my friends. Where would I be without the understanding support of my friends? From coffee dates to phone chats, my friends have been there for me and my family tremendously this year. I'm sorry to all of those I have ditched last minute when something has come up, and I will make it up to you, but in the meantime, know that all of you mean everything to me. <br />
<br />
Though I have much more to be thankful for, my family, friends, and dogs will always be my greatest blessings and this Thanksgiving leaves me with much to be thankful for and much to look forward to. This Christmas will be the first for my nieces, and as my family keeps getting larger, my blessing do as well. <br />
<br />
I hope everyone has full bellies as they share this day, and many more, with great friends and family.<br />

Yesterday was just unpleasant.<br />
<br />
At 5 am the dogs woke us up. They were in the living room barking in a blind panic. The noise they were making was unreal. All I saw when I stumbled into the living room was red. My window was glowing red like it was sunset.<br />
<br />
Confused, I looked out the window and gasped. Across the street the house was up in flames. I must have said something because in a flash hubby was at my side asking what was wrong. Thankfully, a police officer was standing in our driveway so we knew fire trucks were on the way.<br />
<br />
In the light of day, and under a think blanket of smoke, we found out no one was in the house at the time of the fire, so I was thankful.<br />
<br />
The morning chores went as usual except for a bit of agitation from a few of the rabbits and the chickens. The smoke, the sirens, and the fire made for a scary morning for them. I gave them all extra pets and left for a few hours.<br />
<br />
When I came home, I had the biggest disappointment waiting for me.<br />
<br />
Approaching the rabbits to replace the frozen water bottles, I was greeted by all but one. I knew before I even opened the door that my lovely Big Bunny had passed away. She had been fine in the morning; playful and cheery. We are uncertain what the cause of death is, but I fear heat stroke. Hubby thinks old age since it appears she passed peacefully and she was fine for most the morning and afternoon. He also pointed out that her hutch gets the least amount of sun in the day (a privilege for being a pet), so it would be more likely if one of the others got heat stroke.<br />
<br />
Whatever the reason, it's sad to see my pet bunny is gone. Now, instead of a happy bunny standing at the cage door to greet me, all I have is an empty hutch.<br />
<br />
She will be missed, that is for sure.<br />

So, here is the promised post. <br />

Today, I discuss how I make cheese.<br />

I did not use the directions found on New England Cheesemaking Supply's site, but I wish I had. I used some other directions that I can no longer find. We will reference <a href="http://www.cheesemaking.com/howtomakemozzarellacheese.html" target="_blank">New England's directions</a> though, and point out all the mistakes made.<br />

First off, <a href="http://gogodogo.ca/" target="_blank">April</a> came over and we bought our gallon of milk each. My sister let me borrow her citric acid, liquid rennet, and cheese salt. We had everything we needed to make our 30 minute mozzarella! Little did we know the disaster that was to follow...<br />
<br />
We started off warming the milk slowly in a big pot over medium heat to 90 degrees Fahrenheit. Since I don't have a milk or candy thermometer, we used my meat thermometer. Don't recommend doing that. Mine only went in 50 degree increments, so that made gauging the temperature a bit difficult. We will call this mistake one. <br />
<br />
While we waited for the milk to warm, we diluted the citric acid. Then, we remembered we were doing a double batch, and measured it out again. After double checking that I wasn't screwing up too badly, we poured it in the milk and gave it a bit of a stir.<br />

While it continued to heat up, we measured out the rennet and diluted it as well. This time, I remembered we were doing a double batch. Once the milk reached 90 degrees, we did not remove it from the heat when we added the rennet. We did not let it sit for 5 minutes, covered. Instead, we added the rennet, stirred the whole pot, and skipped ahead to heating it to 110 degrees. Call this mistake number 2.<br />

At this point, you can start laughing at my inability to read directions. However, I defend myself by saying that we followed a different set of directions to the letter. I swear on that.<br />
<br />
I digress. Let's continue with the fail.<br />
<br />
So, we slowly heated the cheese to 110 degrees, all the while checking for curds to form. If we had followed the New England's instructions, we would have known that the curds should have formed when the pot was resting. Instead, what we were doing was destroying every attempt the curds had of forming. We heated to milk too soon, I stirred the pot (more than once), and to boot, I over heated the milk by allowing the temperature to get up to 120 degrees. At this point, the milk was separating into curds and whey, but not forming the nice, stiff curds like they should have. It looked more like curdled milk. Yum. <br />
<br />
We will lump all these mistakes into mistake number 3.<br />
<br />
In an attempt to fix this, we allowed the milk to rest. (Yes, I'm laughing too.) I read that sometimes the rennet just needs more time. Hindsight tells me that it was too late to save my curds. All the stirring had broken the curds up too much for them to form together, and over heating the milk killed what was left of the rennet. My poor mozza was not looking good.<br />

We strained the milk/curd mixture through some cheese cloth. We ended up with a mass of soft, unformed curds. If we had followed some good directions, than at this point we would have had nicely cut, thick, tofu-like curds. <br />
<br />
When the curds were done straining, we divided them into 2 bowl. We heated the bowls in the microwave (as per our directions) to try and get the whey to move out of our curds. It did not work. We only succeed in making hot curd soup. <br />
<br />
After repeated warmings and attempted strainings, it proved hopeless. I poured all the curds and whey into some cheesecloth and hung it up to drip out the whey.<br />

After 24 hours of hanging, the cheese was nicely firm, but very crumbly. We divided it up into 2 lumps and we each made lasagna out of it. So darn good.<br />

So, on July 2nd, I took a bunch of pictures of my garden for everyone to enjoy and never posted them. Life got in the way and retreated into my hermitage for a while to adjust to the many changes happening. This created a very real problem. My photos have become out of date. The garden is growing crazy fast in this heat, so the photos are useless if you want to see how my garden looks at the moment.<br />

Knowing how sad everyone would be at not seeing some pictures, I decided to do a sort of before and after. Below I will present to you what my garden looked like, and what it looks like today. This way, all my effort will not be wasted and we get to see how quickly a garden can change in such a sort time.<br />

However, I took less photos and didn't realize most of them were blurry or too dark to use until after I got inside. Oh well. We can deal with that. <br />

We were able to harvest all the heads of broccoli and are waiting for these new ones to mature a bit more. Turns out, we harvested the last batch a bit late and they were a tad bitter. I love (raw) broccoli, so I will definately be harvesting these ones sooner.<br />

The spring onions are ready to be pulled and eaten! I can't wait! The red and yellow ones all had their stems fall over, so I figure they will be ready soon as well.<br />

We pulled all the carrots shortly after the first photo was taken. Hubby is in charge of the carrots and he was picking them one by one based on their estimated size. As a result, he left them in the ground to get larger and ignored that his only mature to about 6 inches in length. In the end, the extra time in the ground made them a bit woody. I've planted 2 more rows since then and the first of those is sprouting.<br />

So, there we have it. I will do this all again next week, but only to show the massive size of a few of the plants. Hubby doesn't like these photos and gave me some good ideas for what to do next time. Now that we are done marveling at the fact that I kept all these plants alive for more than a week, lets move on.<br />

In an attempt to post more frequently, I have added a few new ideas to my blog. First, over at <a href="http://mirandacreates.wordpress.com/" target="_blank">Miranda Creats,</a> she has started a series of posts every Friday that consists of a single photo capturing a moment from her week that she titles "This Moment". I ripped off her idea (didn't even change the title of the post) and I, too, will post a photo on Fridays. I think this is a lovely idea. I also think you should check out her blog. Her kids are freaking adorable.<br />
<br />
As well, I will be trying a new Thursday post that should be interesting. I got the idea from <a href="http://gogodogo.ca/" target="_blank">April</a> who likes to satisfy her curiosity by asking a lot of great questions. On Thursdays, I will attempt to answer them in my own way. Since I don't like telling people how to do something and I never will claim to be an expert, I will set these posts up more as a run down of how I do things over here. I will call it "How Laura Do". Flawless! Don't forget to go check out April's blog.<br />

I really hate this heat. We have record highs around here and its not going away anytime soon. Though I don't care for Summer, its not because of what the weather does to me that causes me such anger. I'm fine in shade with a fan, and if I have a cold drink, even better, but my poor animals. <br />
<br />
I do what I can for the outdoor animals, but its tough fighting Mother Nature. Even my best is nothing against such high temperatures. Knowing I'm inside with the AC cranked and they are outside makes me so sad. Rabbits do not do well in temperatures above 25 degrees, so they have frozen water bottles in their cages as soon as temps get that high. Still, I can see its affecting 2 of my rabbits. They are panting away looking beyond miserable. <br />
<br />
The chickens are under shade most of the day thanks to the pear tree, and the pigeon sunbaths all day anyways, so I'm not too concerned about him (her? it?). Poor rabbits, always on my mind. I'll just keep on what I'm doing and hopefully I brainstorm some new ideas to try as well.<br />

Why hello. Its been a while. Terribly sorry about that, but I haven't been feeling well recently. Let me give you a couple of highlights to catch you up.<br />
<br />
I had a few wonderful blacksmithing lessons! Pictures are coming. Both projects are unfinished, and once they are, I will post some pictures for all to see. I will tell you that I made a tomahawk and am finishing up an ornamental snail. Its pretty cute.<br />
<br />
In sad news, and the main reason I haven't posted, is the Hen I adopted passed away yesterday. Her recovery was such a rollercoaster. She did better, then got worse, then got so well I was thinking of naming her, then disaster struck. On Monday, I saw a mite on my hand when I was feeding her. I treated her for them, knowing that mites will impede her recovery, and hoped for the best. Tuesday, she looked depressed. Not moving, but still eating. Wednesday, she was very ill. When I picked her up to examine her, my arms were covered in mites. I looked at her chest, and her skin was black and moving. She was infested. Her comb and wattle were white, she was anemic, and she was in pain. They were sucking the life out of her. <br />
<br />
This was a desperate situation, and I took desperate measurements. I got stronger chemicals and applied it under her wings, on her chest, and around her butt, all the mites hiding places.<br />
<br />
Thursday was constant care, but no improvement. The mites were dead, but she was drained. <br />
<br />
Friday, just before, 3pm, she passed away.<br />
<br />
Telling the previous owner who trusted the hen to my care was devastating. A lot of 'if only' have been running through my head. If only I realized how bad the mites were sooner, if only I started force feeding her sooner.... If only.<br />
<br />
I'm crushed. I really hate losing an animal, and with its history, it makes it hurt more. <br />
<br />
Sigh.<br />

Lets move on to happier things. <br />
<br />
My sister gave me her two rabbits, a black buck and a silver/grey doe (who is actually my Prince Charming's sister). She is deciding that chickens will be more worth her while. For the same amount of effort, she gets fresh eggs everyday, and no messy butchering! I'm happy. I can't wait to start breeding my does! Baby bunnies are adorable. <br />
<br />
My garden is doing well. Except the spinach. It was attacked by a worm and eaten away. My cucumbers were almost wiped out by a slug, but we saved 2 plants! Today, I finally got around to planting some more salad mix, new spinach (ripped out the gross ones), radishes, and carrots. I'm late doing all this, but oh well. I'm still learning.<br />

Side note, I'm puppy-sitting my in-laws dog, Abby. She's a lab-golden retriever mix and she is adorable! She's not use to being inside, but she is having a good time with my boys! Expect to see a lot of photos of her over the next 3 weeks.<br />

Just a quick note about things here.<br />
<br />
I didn't have a blacksmith lesson on the weekend. Instead, I attended an amazing Retirement Party for my father-in-law put on by my brother and sister-in-law and celebrated Mother's day!<br />
<br />
Pigeon is doing well. He/she/it broke a nail on the wire cage, so I had to clip and clean the area and fix the bottom of the cage so it wouldn't happen again. Bad news; pigeon now hates me. He tries to remove skin every time I feed him.<br />
<br />
Chicken is iffy. We are doing everything we can for her, but she isn't doing as well as we hoped.<br />
<br />
Garden is amazing! So many veggies growing!<br />
<br />
Flower garden is terrible. So many weeds...<br />
<br />
Rabbits are happy in their hutches.<br />
<br />
Chickens are happy, but stopped laying eggs.<br />
<br />
Dogs are monsters.<br />

Today has been eventful. I spent all of yesterday, and a good portion of today, getting ready to bring home 2 new flock members!<br />
<br />
One, a young pedigreed Australorp hen, was the sole survivor out of 40 chickens after a devestating mink attack. She was badly injured on the back of her head by the mink. The other is the last of 6 pigeons that shared the coop. Knowing that the mink was still roaming around, it was felt that it was too dangerous to keep the birds there. On Monday, I was asked if I would take in the birds. Their owner had helped me get started with chickens and has been such a help with my silly questions, I couldn't refuse when she asked.<br />

Driving the birds to my house was nerve wracking. I couldn't help but feel bad for the hen every time there was a bump. I imagine she is in enough pain as it is, I hated the thought of adding more. When we got home, she seemed too stressed to move, so she is resting in her crate with some water until tonight. Once the sun starts to set, I will move her to her hospital room to recover. Once her wound is healed up, she will join my little hens outside. I'm sure she will enjoy it!<br />
